# What You'll Need:

01 - 2 red bell peppers, cored and sliced into strips
02 - 2 yellow bell peppers, cored and sliced into strips
03 - 1 red onion, peeled and sliced into half-moons
04 - 1 medium zucchini, sliced lengthwise into 1/4-inch strips
05 - 1 cup cherry tomatoes, halved

06 - 2 tablespoons olive oil
07 - 2 tablespoons Tajín seasoning
08 - 1 teaspoon smoked paprika
09 - 1/2 teaspoon ground cumin
10 - 1/4 teaspoon freshly ground black pepper
11 - 1/2 teaspoon kosher salt

12 - 5.3 ounces feta cheese, crumbled

13 - 8 small flour or corn tortillas
14 - Fresh cilantro, chopped

# How to Cook:

01 - Preheat oven to 425°F (220°C) and position the rack in the center.
02 - Line a large rimmed baking sheet with parchment paper.
03 - In a large mixing bowl, combine the sliced bell peppers, red onion, zucchini strips, and halved cherry tomatoes. Drizzle with olive oil and sprinkle with Tajín, smoked paprika, ground cumin, black pepper, and salt. Toss until every piece is evenly coated.
04 - Spread the seasoned vegetables in a single even layer across the prepared baking sheet, ensuring space between pieces for proper roasting.
05 - Roast for 20 to 22 minutes, stirring halfway through, until the vegetables are tender and lightly charred at the edges.
06 - Remove the pan from the oven and scatter the crumbled feta over the hot vegetables. Return to the oven for 3 additional minutes until the feta softens and begins to warm through.
07 - Warm the tortillas in a dry skillet over medium heat or in the microwave for 30 seconds until pliable.
08 - Spoon the roasted vegetables and feta into warm tortillas. Finish with a generous sprinkle of fresh cilantro and a squeeze of lime juice.
