01 - Preheat oven to 375°F. Line two baking sheets with parchment paper.
02 - In a medium bowl, gently combine strawberries, pineapple, kiwi, blueberries, apple, lime juice, honey or maple syrup, and mint. Chill until ready to serve.
03 - In a small bowl, mix together the granulated sugar and ground cinnamon until evenly blended.
04 - Using a pastry brush, lightly coat both sides of each flour tortilla with melted unsalted butter. Generously sprinkle both sides with the prepared cinnamon sugar mixture.
05 - Stack tortillas and cut into wedges. Arrange slices in a single layer on prepared baking sheets.
06 - Bake in preheated oven for 8–10 minutes, flipping halfway through, until golden and crisp. Remove from oven and let cool.
07 - Transfer chilled fruit salsa to a serving bowl. Surround with cinnamon sugar tortilla chips for dipping. Serve immediately for optimal crispness.
